cups mixed add-ins such as coarsely chopped pecans or walnuts, dried cherries or dried cranberries, chocolate chips, toffee chips, and/or sweetened flaked coconut

1. Preheat oven to 350°F. Grease 15½” by 10½” jelly-roll pan. In medium bowl, with wire whisk, mix flour, baking soda, and salt.

2. In 3- or 4-quart saucepan, melt butter over medium heat. Remove saucepan from heat; stir in sugar and vanilla. Add eggs; stir until well mixed. Stir in flour mixture and add-ins just until blended. Spread batter evenly into prepared pan.

3. Bake until toothpick inserted 2 inches from edge comes out almost clean, 25 minutes. Do not overbake; blondies will firm as they cool. Cool completely in pan on wire rack.

4. When cool, cut blondies lengthwise into 4 strips, then cut each strip crosswise into 6 pieces.

EACH BLONDIE: About 265 calories, 3 g protein, 38 g carbohydrate, 12 g total fat (6 g saturated), 2 g fiber, 43 mg cholesterol, 230 mg sodium.
